These pancakes are not only delicious but they also offer a good amount of protein thanks to the Greek yogurt. This makes them more filling than traditional pancakes, helping to keep you satisfied longer. Plus, they’re versatile and can be customized with your favorite toppings!

  • 1/4 tsp salt
  • 3/4 cup Greek yogurt plain or vanilla
  • 1/2 cup milk or plant-based milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted butter plus more for cooking
  • Fresh berries blueberries, strawberries, and/or raspberries
  • Honey or maple syrup for serving

Instructions
 

Mix the Dry Ingredients

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Prepare the Wet Ingredients

  • In another bowl, mix the Greek yogurt, milk, eggs, vanilla extract, and melted butter until smooth.

Combine the Ingredients

  • Gently stir the wet ingredients into the dry ingredients. Be sure not to over-mix the batter.

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.

Serve!
