Equipment

  • 2 Mixing bowls

Ingredients
  

  • 1 cup all-purpose flour or gluten-free flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup Greek yogurt plain or vanilla
  • 1/2 cup milk or plant-based milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted butter plus more for cooking
  • Fresh berries blueberries, strawberries, and/or raspberries
  • Honey or maple syrup for serving

Instructions
 

Mix the Dry Ingredients

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Prepare the Wet Ingredients

  • In another bowl, mix the Greek yogurt, milk, eggs, vanilla extract, and melted butter until smooth.

Combine the Ingredients

  • Gently stir the wet ingredients into the dry ingredients. Be sure not to over-mix the batter.

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.

Serve!

  • Stack the pancakes on a plate, top with fresh berries, and drizzle with honey or maple syrup.
